Formae Val di Fiemme
The flavour of Val di Fiemme captured in a cheese rooted in the mountain pastures and historic dairies of the valley
Some cheeses do not simply belong to a place: they are a true expression of it. Formae Val di Fiemme is part of the great family of traditional local cheeses, deeply connected to the territory where they are made and able to tell its story through flavour, characteristics and traditions.
Once produced in the mountain pastures and traditional turn-based dairies of the valley, it follows a cheesemaking tradition that still lives on today at Caseificio Sociale Val di Fiemme. It is a washed-rind cheese, a maturation technique in which the rind is manually treated with water and salt. This process encourages specific fermentations, creating the characteristic slightly greasy rind and giving rise to intense and distinctive aromas.
Another defining feature of Formae Val di Fiemme is that it is made with raw milk, helping preserve more of the milk's natural characteristics and, with them, the nuances linked to the environment where it is produced. The result is a cheese that evolves with ageing, developing new and distinctive aromas and flavours over time.
Each wheel therefore follows its own rhythm: from younger versions, with a softer and more delicate character, to longer-aged cheeses, where the flavour gradually becomes richer and more pronounced.
The Formae Val di Fiemme di Malga tells a story of its own. Made with milk from the mountain pastures during the summer season, it is matured using a distinctive technique that involves grape-seed oil instead of the traditional water-and-salt treatment. An original interpretation that meets the tradition of Alpine grazing and enhances the characteristics of mountain milk.
Formae Val di Fiemme is a cheese to be savoured slowly, following the aromas of its rind and the different nuances that time brings. Delicious on its own, it is also perfect for cheese boards and pairings with bread, honey and local products.
