Some things can disappear quietly: an ancient seed preserved through generations, the scent of a plant gathered in the woods, a recipe once prepared in the homes of the valley. This is where N'OUTA begins—a project that looks to the past in order to imagine the future.
In Ladin, N'OUTA means “like in the old days”. A name that perfectly captures the dream of Sara and Fabio, two young people from Val di Fassa who chose to reconnect with the traditions of their homeland, searching for products, plants and knowledge that had long been part of everyday life in the valley but were gradually being forgotten.
Their story has a particularly special beginning. In 2015, Assunta Dantone, the last resident of the tiny hamlet of Vera at the foot of the Marmolada, gave them just 100 grams of an ancient variety of barley that her family had cultivated for generations. Sara and Fabio decided to preserve this small inheritance, reproducing it year after year. From those few seeds, a much larger project began to grow.
After years of research, experiments, successes and setbacks, N'OUTA officially came to life in March 2020. The idea was simple, yet ambitious: to rediscover traditional products and reinterpret them with a contemporary approach, using ingredients gathered in the Dolomite woods and grown on their own land.
Ancient grains, wild plants and ingredients from the mountains are thus given a new voice. Barley is grown and roasted to bring back the flavour of the traditional “poor man's coffee”, while plants gathered and cultivated locally are transformed into syrups, preserves, honey and other creations that capture the aromas of the valley. Combining ancient knowledge with innovative techniques, Sara and Fabio turn simple ingredients into small expressions of their homeland.
Over time, however, N'OUTA has become something even greater. Sara and Fabio realised that creating products is not enough if the stories behind them are not passed on as well. Their project has therefore grown into an agricultural and cultural initiative, dedicated to preserving historical memory, biodiversity and the Ladin identity of Val di Fassa.
Through collaborations with schools and summer centres, guided visits, projects and educational activities, N'OUTA aims to bring younger generations closer to their roots and to highlight the importance of the relationship between people, land and culture.
N'OUTA is an invitation to slow down and remember. To rediscover how an aroma, a flavour or a seed can hold an entire story. Because a valley is not made only of its landscapes: it is also shaped by the people who live there, the gestures passed down through generations and an identity that deserves to continue living.
