There are places you visit for a meal and then discover that you want to stay for everything around them. Ristorante Miola, set on a hillside overlooking Predazzo, is one of those places: outside, green meadows, fir trees and sweeping views across the whole of Val di Fiemme; inside, the warmth of a rustic and welcoming setting deeply rooted in local tradition.
Since 1981, the Giacomelli-Dellantonio family has been carrying forward a story of hospitality and cuisine, passing down from one generation to the next the pleasure of welcoming guests and telling the story of the local area through its flavours.
Today, this story is also in the hands of Elisabetta Dellantonio, the restaurant’s owner and chef, who brings her experience and deep connection with the valley’s recipes and local ingredients into the kitchen. Her cuisine respects tradition while allowing room for seasonality, careful ingredient selection and her own personal touch.
The cuisine begins with the territory itself: local ingredients, traditional recipes and seasonal products. Cheeses from the valleys, local cured meats and meats, ingredients from the surrounding woods and other Trentino specialities come together in a menu that approaches mountain cuisine with respect and passion. Among the best-loved dishes are canederli with chanterelle mushrooms, alongside soups, polenta, game and other great classics of Trentino cuisine.
But Ristorante Miola also represents another way of approaching food: one that is more conscious and attentive to the environment. The restaurant has been awarded the Ecoristorazione Trentino certification, recognising its commitment to environmental sustainability and to promoting local products.
During the summer, the panoramic terrace invites guests to slow down and enjoy the view, perhaps over an aperitif or a coffee, while nature remains the quiet protagonist of the experience.
