There are taverns where tradition is not something to be kept behind glass, but a story to be carried forward every day, among simmering pots, enticing aromas and dishes made for sharing. Osteria La Cantinetta, in Varena, Val di Fiemme, is one of them.

With the Bellante family having spent around twenty years in the kitchen, this deeply local family-run restaurant welcomes guests into a rustic and homely setting, where the atmosphere of an old-fashioned tavern provides the perfect backdrop for a cuisine rooted in the local area.

Here, Trentino’s culinary traditions come to the table through some of the region’s most recognisable dishes: canederli, strangolapreti, polenta, game and Trentino cheeses, alongside dishes that change with the seasons and the availability of fresh ingredients. The kitchen pays close attention to what the local area has to offer, also working with local farms to source meat, eggs, cheese and other ingredients.

But La Cantinetta is about more than tradition. The Bellante family seeks a balance between respect for mountain recipes and a more open, modern and creative approach to cooking. Alongside the classics, you might find homemade dishes such as spelt ravioli filled with venison, risotto with seasonal mushrooms or desserts with a creative touch, such as mascarpone cream with Val di Cembra saffron and berries.

And for those who cannot resist pizza, La Cantinetta is also a pizzeria, serving pizza in the evening, with several creations featuring local and Trentino ingredients.

A genuine cuisine, in other words, deeply rooted in the mountains but never afraid to look beyond them. Because at La Cantinetta, simplicity becomes pleasure, and every dish carries a small taste of Val di Fiemme.
