Some passions begin early in life and, over time, become a way of telling your own story. For Davide Lucian, pastry-making is exactly that: research, memory, technique and, above all, the desire to transform simple ingredients into something truly surprising.

His roots are deeply connected to Primiero and the Dolomites, yet his professional journey has also taken him further afield, through important experiences in Italy and across Europe. A journey shaped by kitchens, great mentors and exceptional ingredients, which taught him to approach every ingredient with both respect and curiosity.

In 2009, Davide fulfilled his dream of opening his own pastry shop in his home region. Since then, every creation has been born from the meeting of tradition and research, with particular attention to carefully selected ingredients and flavours inspired by the mountains.

A special place in the workshop belongs to Carletto, the living sourdough starter that has accompanied Davide for years and lies at the heart of his great leavened creations. Panettone, colombe, brioches and other baked goods require time, patience and respect for the natural rhythms of fermentation—because some of the best things simply cannot be rushed.

Then there is chocolate, one of Pasticceria Lucian's greatest passions. Dark, milk, white or blond chocolate becomes a world to explore through different textures, intensities and pairings, giving life to creations designed to delight every kind of palate.

But curiosity does not stop at pastry-making. Over the years, coffee has also become a new field of discovery, earning its own space in a small micro-roastery within the workshop. Another step in a journey that sees food not simply as a product, but as culture, knowledge and continuous exploration.

Today, Pasticceria Lucian continues to tell the story of its homeland through its creations: fresh pastries, biscuits, great leavened products and artisan chocolate, alongside products and combinations inspired by the colours, aromas and flavours of the Dolomites.

The quality and dedication behind this work have also earned important recognition: Pasticceria Lucian has been featured among the pastry shops recognised by the Gambero Rosso Guide to Italy’s Best Pastry Shops, while Davide Lucian’s Chocolate Panettone was selected among the 15 best in Italy in a national competition dedicated to great leavened creations. A journey of growth and passion that continues to turn everyday work into new challenges and achievements.
