In Cavalese, in the heart of Val di Fiemme, Cose Buone da Paolo is first and foremost a family story. It all began in 1969, when Paolo’s father started making traditional local sweets, winning over both residents and visitors and earning himself the curious nickname Paolo Pasticcio. Simone, his son, grew up surrounded by those aromas and flavours, learning from an early age the value of things made with care.

Passion eventually became a profession. After gaining experience in the restaurant industry, Simone also joined the kitchen of Molin di Cavalese, working alongside chef Alessandro Gilmozzi. This experience taught him to look at ingredients from a new perspective and to turn even the simplest products into something special.

And so a pastry shop was born where tradition and creativity go hand in hand. Strudel remains one of its signature creations, alongside classic and traditional cakes, biscuits, seasonal sweets, chocolate and many other creations. There are also savoury offerings and specialities born from a desire to experiment, always with a strong focus on the quality of the ingredients.

The production is still entirely handmade: every product is crafted with care, using carefully selected ingredients and with a special focus on Val di Fiemme and Trentino, supporting the products of small local producers whenever possible.
